Food trucks have been a hot topic in Spokane lately with the Spokane City Council working out new rules and regulations for this rapidly growing industry. But clearly the issues with the city aren't stopping some from opening up shop with new food trucks. In fact 2 of the newest in the Spokane and Coeur d' Alene area are new branches off of existing brick and mortar businesses.
Here's what's new-
Love @ First Bite
Final preparations are underway for what to this bloggers knowledge will be the Spokane area's first cupcake truck.
Love @ First Bite has been a small locally owned and operated cupcake shop , with 1 location in Spokane Valley at 11305 E. Sprague Ave. Business owner Monica Gonzales has built her business in only a couple of years to one of the most popular cupcake shops in the Inland Northwest. In fact the businesses owner even submitted a YouTube video to audition for the Food Network TV Show , Cupcake Wars ( more on the Cupcake Wars audition can be found on this prior INBW post-

And now the cupcake shop is expanding into the Spokane food truck world with a hot pink mobile shop. The new cupcake truck will sell Love @ First Bite's famous cupcakes as well as a selection of iced coffee's and Italian cream soda's.
No official stops for the Love @ First Bite truck yet but it is expected to be primarily on the South Hill and in North Spokane.

Meltz Extreme Grilled Cheese
Meltz is also a relatively new business , opening their doors back in the Spring of 2012 ( info on their opening can be found on this prior INBW post -http://www.inlandnwbusiness.com/2012/05/grilled-cheese-big-business.html ) .
Similar to the Cupcake shop mentioned before, Meltz has also risen to fame in the local restaurant scene. The Grilled Cheese restaurant is locally owned and operated and serves a variety of gourmet grilled cheese sandwiches with new menu item being added frequently.
Meltz's brick and mortar shop location is in Coeur d' Alene at 1735 W. Kathleen Ave Suite 3 in the Fairway Gas and Go shopping plaza.
And now Meltz is expanding their reach as well with a new " Mobile Meltz " food truck. Since the truck is new no dates and times have been announced for the new Meltz Food Truck but it is expected to be in Downtown Coeur d' Alene from time to time at least.
The new truck will also be made available for private events.

The Bistro Box is now open in Spokane and fully operational at several local sites. The business was mentioned earlier on this site and moved from Renton. Search the INBW site for more info.
Hawaiian Lion Shave Ice Bus a Downtown Coeur d' Alene VW Bus that sold shave ice has moved to Arizona and won't be open any longer in Coeur d' Alene
And we've learned of a new Spokane based food truck called The Gingham Apron . And although the truck does seem to be in business we have yet to get any info.
