A couple of months ago the Spokane market got it's first location of Cafe Rio, a Utah based Mexican restaurant chain. And, now we have confirmation of a second location for the metro area.
Cafe Rio will open a new location on the South Hill as a part of the new Regal Plaza shopping center which will also the site of the new South Hill Target. The new Café Rio will be on one of the pad sites there and our sources say this location will either open late this year or early in 2015. Construction has yet to begin on this portion of the project.
Cafe Rio also has a location in Coeur d' Alene, next to Fred Meyer by the intersection ofUS 95 and Kathleen Ave. That store opened a couple of years ago and has proven to be popular among some locals.
Cafe Rio is headquartered in Cottonwood Heights, Utah and has been rated as one of the fastest growing companies by both INC Magazine and Utah Business Magazine. The chains restaurants have menus of many items inspired by the Rio Grande region of Northern Mexico.
